A striking and stridently colourful range of herbs and spices are brought together in North African dishes. There are unique combinations of aromatic sweetness and hot spice.

North African cuisine reflects the influences of many traders, travellers, invaders and migrants who all left their stamp on dishes from Algeria, Egypt, Libya, Morocco and Tunisia.
