With four experienced tutors teaching across five days, we offer you a great depth of knowledge and the key details to get ahead. Whether you are a B&B owner or a senior development chef, this mix of hands-on cooking, tutor demos and theory-based exercises will make sure you are well-equipped to deliver great veggie and vegan food.

Over the week you will discover:

  • How to avoid cross-contamination and label your menus correctly
  • Current trends and discover exciting new veggie and vegan ingredients
  • How to make your own meat alternatives and what to do with ready-to-go products
  • How to adapt any dish for veggies and vegans
  • The latest vegan cheese and dairy substitutes and how to make your own
  • Learn how to create balanced dishes with varied texture and complex flavour profiles
  • How to plan menus, create recipes and scale up dishes, including starters, snacks, sides, mains and desserts
  • Some of the best go-to veggie showstoppers and on-trend options to wow your customers
  • Michelin and Rosette-standard vegan patisserie and desserts

9.30am – Tutor Introduction and course outline
10.30am – Practical workshop begins and continues through to 4.30pm with a break for lunch

Day 2 to Day 4
9:00am – Coffee/Registration
9:30am – 4.30pm Workshops. You will be advised of break times each day

Day 5
The final day runs from 9am to 3pm approx

    Get here and be open to ideas. You will have fun and learn loads. It’s a very small and interactive learning course, very positive. A very in depth look at vegetarian cooking with accents on vegan and dietary restrictions. Informative 2 way flow of ideas with tutor and participants.
