The Vegetarian Society Cookery School has trained hundreds of professional chefs and caterers. Our graduates go on to improve and develop their vegetarian and vegan menu offering in their businesses, ensuring they keep a competitive edge. Based in Greater Manchester, the school attracts people from all over the world.

The five-day intensive Professional Chefs’ Diploma includes workshops, information about nutrition, discovering new flavours, menu planning and practical cooking sessions. The course introduces vegetarian and vegan ingredients you’ll be able to use every day. You’ll learn how to maximise flavours and adapt your menus to keep them on trend.

We’ve refreshed and improved the Professional Chefs’ Diploma for 2018, adding in a full day on vegan patisserie!

The intensive five-day training now includes incredible vegan desserts suitable for the most impressive of menus, giving you lots of dairy-free and egg-free options.

Sam Platt, Cookery School Manager, said: “The day will include plated desserts, afternoon tea and buffets, to really tempt in those vegan and veggie customers. Learn skills to give you a unique selling point and get ahead of your competitors with amazing free-from desserts.”

  • Lemon Mille Feuille
  • Grilled Feta Polenta

9.00am – Arrival and registration
9.30am – Tutor Introduction and course outline
10.30am – Practical workshop begins and continues through to 4.30pm with a break for lunch

Day 2 to Day 4
9:00am – Coffee/Registration
9:30am – 4.30pm Workshops. You will be advised of break times each day

Day 5
The final day runs from 9am to 3pm approx

    Looking to extend myself to vegetarian/cooked options from raw vegan. I can include more cooked options and i feel more confident about using new ingredients, spices, etc. Better than expected.     Get here and be open to ideas. You will have fun and learn loads. It’s a very small and interactive learning course, very positive. A very in depth look at vegetarian cooking with accents on vegan and dietary restrictions. Informative 2 way flow of ideas with tutor and participants.
