Indian cuisine encompasses a wide variety of regional cuisines native to India. Given the size of the country and its diversity of climates, soils and occupations, these vary significantly from each other in their use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by the various spiritual traditions in which vegetarianism is a major strand.

On this course Nina & Sumita (or the Spice Girls as we call them) choose a selection of dishes that typify various regions. You’ll learn a bit about India and a lot about the country's ingredients and cookery techniques from two tutors who are not only a mine of information but are also a riot in the kitchen.
You get to make Dhosas! Yum yum.
